Most producers have finished the season, although some is still being boiled on St. Joseph’s Island near Sault Ste. Marie.
There has been less dark syrup than usual, he said, but that varies across the province, as does the sap run with some having a “good run,” this year.
Marketing is a challenge for some.
Those who have a regular clientele who pick up syrup at the farm are doing relatively well. Arrangements can be made for pickup while maintaining at least six feet of separation.
But it’s not so sweet for those who depend on syrup festivals or sugar shack sales.
Some producers are finding retail demand as strong as normal, others not as good, he said.
It will probably be challenging for those who depend on sales to summer tourists, Williams said.
And export demand and sales remain a question. That market will probably await developments in Quebec, he said.
